Chicken Scarpiello is a spicy Italian dish made with a few modifications so this is paleo approved. It is highly addicting and we often serve this with a heaping plate of broccoli.

Instructions
  1. Mix banana flour and salt and pepper in a gallon size bag.
  2. Cut chicken into 1 inch cubes and add into banana flour mixture. Seal bag and shake until all of the chicken is coated.
  3. Add half of the olive oil to a hot frying pan along with garlic.
  4. Add chicken to pan and allow the bottom to brown rotating every few minutes until all of chicken is browned.
  5. While chicken is browning, cut peppers in strips.
  6. Add remaining ingredients and sauce ingredients to pan, cover and simmer for 15 minutes (or until chicken is cooked through).
  7. Serve warm with you choice of sides.

Recipe Tip

  • For kids who don't eat spicy food, set some chicken aside in after step 2 and cook in olive oil.
  • You can sub the hot peppers for hot giardiniera as I did in the pictures.
